Whole30 Day 15 & Spaghetti + Meatballs

Half way through my whole30 now. Day 15 – what! what! Not gonna lie. I was driving home from work yesterday and the exit came up for my fav donut shop – Colonial Donuts on Lakeshore Ave. in Oakland. I thought about those donuts reeeeeeeeeeeal good driving up to that exit and driving past it. My laziness to find parking and feed the meter lead me to just drive right past that exit. #crisisaverted

In general I feel a lot better on a daily basis. No bloating. No stomach aches. No preg-bellies. I’m not starving or hungry all the time. I fit my clothes better (especially around the belly area – which is the first thing to bloat or get big when I’m “cheating”). Just eating real food everyday. Here’s a compilation of some of the meals I’ve been having. I’ve wanted to blog more frequently with my daily eats but once again my laziness has gotten the best of me. So a half way check-in will have to do.

I had a really nice, relaxing Labor Day weekend. Went with a small group of friends to Lake Berryessa near Sacramento..? (I have no idea) Kept it paleo with soft-boiled eggs, some sugar-free beef jerky, tons of cuties, grapes and a few Larabars. Got some much needed sun in and had water-sports fun! We killed it at the Korean All-You-Can-Eat BBQ place afterwards. (grilled meat wrapped in lettuce – Korean BBQ can be very Paleo friendly since you cook your meat at your table) ;]

Spent the rest of the weekend spending quality time with the 2nd love of my life: Hurley! We tried to keep it active. So we went on walks, watched his (human) dad play football, ran around, and he even laid on my feet as weight so I could do some sit-ups. Ha!

So last night, I ate dinner already but had all these leftover meatballs from the batch of Primal #PacBalls I made. I threw a spaghetti squash in the oven real quick & figured I’d pack up lunches for the fam.

I have a recipe for spaghetti squash on my blog soooomewhere, but if you’re as lazy as me, here’s the quick lowdown:

  • Preheat oven @ 350 degrees
  • Cut squash in half
  • Drizzle olive oil
  • Sprinkle garlic pow, black pepper & sea salt
  • Face squash down on baking sheet
  • Bake for 30-45 min
  • I always check it at 30, and leave in for 10-15 more
  • If you overcook it then it gets soggy and your spaghetti will be mushy
  • Then you’ll want to die
  • So don’t do that
  • Otay!?
  • Who actually read this far?
  • Gold star for you!

I used canned tomato sauce and just poured it all over the PacBalls & spaghetti. Done! Lunch for 3 people with half a spaghetti squash. We still have one leftover for tonight. #winning! I ran out of tomato sauce so I just drizzled olive oil over mine and it was still delish! I literally just popped the last meatball into my mouth as I am typing this. Now my keyboard is oily and I’m being super unproductive at work. WHAT’S NEW?!  xo

P.S. Look who I found on the couch this morning when he knows he’s not allowed on the couch. Yes. That’s his guilty-what-are-you-gonna-do-about-it-face.
